Maryland Style Crab Cakes Over Pomegranate , Blueberry, Ginger Cream Sauce
Yields about 10 crab cakes
Compote (for 2 crab cakes)
Sauté scallions in butter. Then mix lump crab meat with the egg and next five ingredients. Add sautéed scallions, lemon juice and ¾ cup bread crumbs. Carefully mix everything together. Form in round patties and coat with ½ cup bread crumbs. Lightly pan fry in olive oil about one minute on each side. In separate sauce pan sauté olive oil, fresh ginger, pomegranate, blueberry compote with touch of white wine, add one cup of heavy cream. Reduce for one minute. Place on plate then place crab cakes on top. Decorate with strawberries, sliced limes and lemon. Top with roasted almonds.
