The Boot, Fish Fry

Chef Chris Stone of The Boot shows you a simple recipe for a tasty fish fry. This one includes The Boot's Catfish and Hush puppies. The Boot is a restaurant located at The Preserve in Hoover. Visit for hours, menus and Boot Buzz.

Boot Catfish         

  • 2 6-oz. catfish fillets cut lengthwise
  • ½ cup buttermilk
  • 1 cup corn flour (not meal)
  • 1 tbl (or to taste) Creole seasoning
  1. Soak catfish in buttermilk for 1 hour
  2. Mix corn flour and seasoning in mixing bowl until well blended
  3. Bread catfish in flour mix until well coated
  4. Fry breaded catfish in peanut oil at 350 degrees for 2-3 minutes, turning if necessary


Hush puppies

  • 1 cup unbleached white flour
  • 1 cup self-rising corn meal
  • 1 egg
  • 1 tsp fresh chopped garlic
  • 1/8th cup onion, finely chopped
  • 1/8th cup red bell pepper, finely chopped
  • 1/8th cup fresh cilantro, finely chopped
  • 1-oz melted butter
  • 1 tsp baking soda
  • 1 tbl (or to taste) Creole seasoning
  • 2 cups buttermilk
  1. Whip egg until frothy in medium mixing bowl
  2. Add all ingredients except buttermilk and fold until uniform
  3. Add buttermilk while whisking
  4. The consistency should be doughy, yet loose
  5. Add to 350 degree peanut oil (I suggest 1-inch balls)
  6. Cook for about 3 minutes until hush puppies float
