Café Royale in Talladega, Minted Pea Dip and Shrimp Salad

Get two great recipes in one segment! These are super simple and tasty crowd pleasing recipes.



Café Royale, Talladega

  • 4 large Cloves of Garlic, peeled
  • 8-12 fresh Mint Leaves
  • 1 Tablespoon Chives, chopped
  • 10 oz frozen or fresh Sweet Peas (we use Cascadia Organic)
  • 1/2 Cup Grated Parmigiano Reggiano (or your favorite parmesan)

Put first garlic, mint & chives in food processor. Process til minced.  Add Peas and Parmesan Cheese.

Pulse 6-7 times.  I prefer to leave a few medium size pea pieces instead of pureeing but Hey, Puree Away if you like!

This recipe works fantastic for tripling or even sextupling!



Cafe Royale, Talladega

  • 5 pounds Fresh Gulf Shrimp boiled in 7 bags of CrabBoil & quickly cooled then squeezed gently between paper towels, then chopped
  • Squeeze juice of 1/2 Lemon over shrimp


  • 2 bunches Celery finely chopped
  • 1 oz Capers
  • 2 Cups Pecan Pieces
  • 1-2 bunch Green Onions, chopped (usually 1 but when they're scraggly & you have to discard so much, add another)
  • 3 Cups your favorite mayonnaise (Helmans is ours; if yours does not have a lemony flavor, add a little more lemon juice)
  • Salt & Pepper to taste

Salt & Pepper to taste in a recipe is a pet peeve of mind but in this recipe, it really does vary Every Time.  All shrimp tastes a little different

and your Capers may add all of the salt that you need.  (Saltiness in Capers varies also.)
