Veranda on Highland, Crawfish and Gnocchi

Crawfish and Gnocchi

  • 2 cups Crawfish Stock (see recipe below)
  • ½ cup heavy Cream
  • 1oz dry Vermouth
  • 1 clove garlic (sliced)
  • 1 spring onion (sliced)
  • ½ crawfish tails
  • ½ tsp. fresh thyme
  • ½ tsp. fresh chives
  • ½ tsp. fresh tarragon
  • 1 Tablespoon oil
  • 1 cup arugula
  • 16 pieces gnocchi (see recipe below)

Potato Gnocchi

  • 1 large Idaho potato (baked)
  • 1 egg yolk
  • 1 ½ Tablespoons melted butter
  • 1 tsp. salt
  • ¼ tsp. fresh ground nutmeg
  • ¼ tsp. white pepper
  • 2-3 Tablespoons all-purpose flour

Crawfish Stock

  • 2 crawfish shells
  • 1 onion diced
  • 2 stalks celery diced
  • 1 carrot diced
  • 1 bay leaf
  • 2 cloves garlic
  • 2 oz. brandy
  • 2 Tablespoons tomato paste
  • 2 quarts water
  1. Heat large sauté pan on medium heat with 1 Tablespoon olive oil
  2. Add garlic, spring onions and crawfish
  3. Sauté for about 30 seconds (do not overcook the crawfish)
  4. Deglaze with vermouth, let alcohol cook out, about 20 seconds
  5. Add crawfish stock, heavy cream and fresh herbs
  6. Let sauce reduce by 1/3.
  7. Whisk in 1 Tablespoon butter and arugula.
  8. Season to taste with salt and fresh cracked pepper
  9. Serve and enjoy!
