Irondale Cafe, Sweet Potato Souffle

Learn where the restaurant, famous for fried green tomatoes, gets its jumbo sweet potatoes.

Irondale Café's Small Batch Sweet Potato Soufflé

  • 3 lbs. sweet potatoes, washed, scrubbed
  • ½ cup butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 teaspoon vanilla
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Mini marshmallows or pecans (for topping)

Preheat oven to 350.

Bake sweet potatoes in preheated oven for 45 minutes to 1 ½ hours, depending on size.

Allow potatoes to cool to the touch. Peel skins off potatoes.

Place potatoes in a mixing bowl. Add all ingredients except marshmallows or pecans. Mix with an electric mixer until smooth. Pour into a baking dish and bake at 350 for 15 to 20 minutes or until hot. Remove from oven and cover with marshmallows; return to oven for an additional 5 minutes until marshmallows have just started melting and are lightly browned.
