Just in time for St. Patty's Day - Irish Stew!

1.5 pounds of beef (or lamb, we have traditionally used beef)

salt/pepper

1 large onion chopped small

6 carrots

5 medium potatoes cubed

1, 16 ounce can of crushed tomatoes

1 or 2 bay leafs

celery, cabbage other things are optional…… (Irish stew is much like a Cajun gumbo, less the rue) whatever is in the backyard garden.  You can also add beer if the broth starts to evaporate.

Just brown the beef, simmer in water about an hour till tender, add all other ingredients, cook slow, salt/pepper to taste.
*Can also be cooked in crockpot
